This technology has the advantage of being simple, easy to implement, but has very large limitations that cause environmental pollution and loss of nutritional value of protein in shrimp shells.
With electrochemical production of chitin, electrolysis of the shrimp shells produces a strongly alkaline catholyte and acidic anolyte, so that the minerals and proteins will be extracted / shrimp shells in the anode chamber and cathode chamber, respectively, furthermore, chitin products are also bleached in the anode chamber during electrolysis. After 2 cycles, the electrolyte will receive high quality chitin from the original shell material. Electrochemistry of chitin production from shrimp shells is completely free of strong corrosive chemicals and polluting the environment is alkaline and acid, using only salt as electrolyte. This is a new environmentally friendly technology to produce chitin from shrimp shells in particular, shell crust in general, was first researched by the Institute of Biotechnology successfully applied in Vietnam.
